Eggs, cheese, whole grain bread, and a few fast to cook or ready o eat raw vegetables, and herbs are my basics for a quick, nutritious and delicious, anytime I'm hungry and don't want to spend long cooking, meal. These are so basic; you don't need recipes to create any of them. I'd love to hear of your favourite variations o this idea in the comments.

Toasted Cheese Sandwich for a quick and healthy lunch for a busy traveller.
Egg with Asparagus and Melted Cheese on Toast
Breakfast for two, pictured above.
I rinse the asparagus and snap the ends off. Place the tips of the asparagus in a covered dish and microwave for two minutes as I'm making the toast. I put a thin slice of tasty cheese on top of the asparagus and microwave this, covered, for one minute. I serve this on whole grain toast.

I may be a bit quieter here on my blogs for a few days as we are about to drive 1,400 kilometers in however long it takes with time out for beach walks and runs and enjoying life. Our next settled in destination is far north Queensland Australia, we may arrive in three days or three weeks, whatever takes our fancy.
I'll have heaps to write and show once I arrive and I'm right on target for a great finish for the Michelle Bridges, 12 week body transformation. I can see and feel the improvement in my fitness and looks.
