I love butter and eating healthy. I will not eat food that has been highly refined, such as margarine. I have been making and using Butter Spread since the 1970's other than for a few years when I stopped using any spread at all. I believe that this spread is healthier than butter on its own or margarine.
Use this formula rather then butter blends or margarine. It is easy to spread and keeps well in the fridge. It is not suitable for recipes where high heat is needed.
250g butter, softened
1/3 cup cold pressed extra virgin olive oil
or cold pressed flaxseed oil
1/3 cup light olive oil
1/3 cup lecithin granules
place all ingredients into a bowl and process until smooth
place in a lidded container in the fridge.
Normally keeps for 3-4 weeks in the fridge
option......add contents of 4 500iu vitamin E capsules, for extra EFAs. This will reduce the shelf life to one week.
