Apricot Banana Splits I remember when my mum made apricot jam. We made apricot splits for breakfast whenever bananas were in season and cheap. Just butter two slices of bread, spread with apricot jam and sliced banana, make into a sandwich and toast it in a waffle iron or sandwich grill.
Variations. Ricotta and Banana Splits. Spread the buttered bread with crumbed ricotta cheese and either honey, maple syrup or Nutella spread. Add the sliced banana and a pinch of ground nutmeg. Preheat a jaffle maker. Cook sandwiches in jaffle for 4 minutes or until golden.
